Last Unspoiled Place & Avocado Poached Eggs

I'm now starting my sixth month living in LOVELY Logan, UT and it's beautiful here! Everything just kind of fell into place.  Richie and Chrislynn let me stay with them until I was able to get a place of my own (I don't know what I would have done w/out their love!) which just so happened to be the same place my cute parents lived in when they were newly weds (pictures to come soon!) and I've been enjoying working like crazy (around 70 hrs a week, :( blah!). Now I'm planning to get back on task with my Happiness Project and Logan Canyon aka the Last Unspoiled Place will fit perfectly into the project!
P.S. Take a look at the Avocado Poached Eggs I made today! They were YUMMY and super easy to make just baked for 20 min at 425 degrees. Not as great as my most favorite eggs benedict in NYC's  44 & X Hell's Kitchen but still good!

A sweetheart of a message... or is it just sugar coating??
